LAMBRUSCO MANTOVANO DOP

With its rich froth and the intense ruby red colour from which its name comes, Rubilio fills the glass with the fresh and floral flavours typical of Lambrusco Mantovano. Echoes of spring violets alternate with red and blackcurrants, intertwining in a symphony of nuances in which you can discern a whiff of fresh fruit. When poured it is characterized by an intense, persistent and generous froth.

The contrast between the sparkling freshness of this wine and the complexity of the local Mantuan cuisine creates a perfect counterbalance, where both sides are enhanced to the full and converge in a surge of flavours.

A wine with a rustic and genuine charm obtained from the finest ingredients. Its dry flavour persists enjoyably on the palate. The moderate tannin content and acidity make it appropriate on warm summer evenings, alone or with light summery dishes. Best drunk one year after bottling. Serve between 12°C and 15°C.

COMBINING WITH FOODS

Rubilio is a good accompaniment to foods with strong and decisive flavours, such as pork, game or lamb. Its fruity notes, consistent froth and young and fresh taste, all distinctive features of Lambrusco Mantovano DOP, mediate the fatty component of these dishes, leaving the mouth pleasantly cleansed. This makes it also well suited to the preserves and mostarde typical of Mantua, especially if paired with Lombardy’s cheeses.
