The Galpèdar is an animal said to inhabit the forests around Mantua. It is similar to a rooster but has four legs. In the stories handed down by grandparents the bird has a docile and idle nature, combined with a good dose of cunning.
In the same way as shrewd people are known as Galpèdars, our wine can be said to be a smart, pleasant Lambrusco that uses its charm and well balanced flavours to generate a contagious bonhomie.
The choice raw materials are fundamental to the production of this wine. The must is left to ferment for a long time at low temperatures so that the yeast works slowly during the transformation of sugars into alcohol. This delivers a product that preserves the original flavours of the grapes and an almost creamy, persistent and inviting froth.

If you had to choose an ideal first course for Lambrusco Galpèdar it would be pumpkin tortelli: a sweet, delicate dish that is also distinct and flavourful. The characteristics of this Mantuan wine make it ideal with delicate, mild flavours, such as raw or cooked vegetables, or appetizers such as vol au vents. Galpèdar is also ideal for dunking the local sbrisolona cake.
